Let’s Define Fine Chocolate

The Fine Chocolate Industry Association (FCIA) defines fine chocolate by both the selection of high quality ingredients and by the artistry of the Chocolate Maker or Chocolatier in creating chocolate, confections or other chocolate creations.


According to the FCIA there are five areas that combine to define a fine chocolate product:

  • cacao origin and processing
  • chocolate production practices
  • non-chocolate ingredient quality
  • chocolatier’s technical expertise
  • artistry and presentation
