Most people prefer milk chocolate for eating out of hand because of its creamy mouthfeel and mild flavor. And we have Swiss chocolate maker, Daniel Peter, to thank for it.

In 1876, Peter made a momentous discovery. Formerly a candle maker whose career was shortened by the increased popularity of oil lamps, Peters married the daughter of famous chocolate manufacturer François-Louis Callier.   The following articles, courtesy of Linda Stradley, are a fascinating, unedited first-person account of Mr. Peter’s interest in chocolate and his development of the first milk chocolate written by his grandson, François Auguste Peter, Sr.
