Directions

  1. Chop both varieties of chocolate as finely as you can get it with a sharp knife. The finer you can cut them, the easier they will melt to the desired consistency you will be looking for. Place all of the finely diced chocolate into into a mixing bowl that can withstand heat.
  2. In a small saucepan, heat the heavy cream on a stovetop until it comes to a boil. Once the bubbles start to appear, turn off the heat and count down 20 seconds. At the end of this countdown, pour the heated cream through a sieve or strainer and into the bowl of two chocolates. Once all of it has been poured, whisk the chocolate with the heavy cream until all the chocolate is fully melted.
  3. If you are choosing to use the Grand Marnier, now would be the time to pour that into the liquid chocolate. The orange flavored liqueur compliments chocolate very well and its sugar content will also help bring some sweetness out of the bittersweet cocoa components.

  5. After the setting time is complete, scoop out portions with a melon baller or cookie scoop. A regular spoon will suffice if neither is available. Take each scoop and hand roll them to the desired ball-like shape, rounding them out to your liking. Roll each ball in either cocoa powder, crushed macadamia nuts, or both if you’re feeling extra daring.
